A nice healthy, quick breakfast or snack.
You need:
Semiyan/ Vermicelli (not the vey fine vermicelli variety) - 1 Cup
Onion - 1 medium size (fine chopped)
Green chilies - 2 nos. (slit)
Curry Leaves- 7-8 nos.
Tomato - 1/2 medium size (chopped)
Vegetables - Carrots, Sweet green peas, Potatoes, Beans (or veggies of your choice, chopped into small pieces)
Lime Juice - As per taste
Mustard seeds - 1 tsp
Hing/ Asafoetida - 1/8 tsp
Oil - 2 tsp
Turmeric powder - 1/4 tsp
- In 1/2 tsp of oil, roast the semiyan till a shade darker than golden brown. Keep it aside.
- Heat the remaining oil, add mustard. Once it starts to splutter, add hing, curry leaves and green chilies. Fry for around 30 sec.
- Add onions, salt and turmeric and fry till translucent.
- Add all the vegetables and fry for 2-3 min.
- Add the semiyan and tomatoes and fry for 1 min.
- Now add hot water double the quantity of semiyan. Cover and cook till semiyan is soft. Check inbetween and add very little water at times if it needs more.
- Serve hot with coconut chutney or tomato ketchup.
