Bread Upma



A very quick and healthy snack. Some like it with tomatoes that make it moist and a little soft. While some like it little crunchy (without the tomatoes) and the tang coming from lime juice. You can aways break an egg if you are super hungry and the eggs do lend some kind of mild sweetness to the bread upma. Use whatever bread you may have white, brown, multi-grain. And yeah stale bread tastes even better.

You need:

Bread slices – 4-5 nos.
Onion – 1 medium size
Green chili finely chopped – 2 nos.
Hing/ Asafoetida - pinch
Curry leaves – 6-7 nos.
Ginger – ½ inch (finely chopped)
Tomato – ½ medium size (finely chopped)
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Turmeric powder – ¼ tsp
Lime Juice (as per your liking)
Lot's of fresh cilantro/ coriander leaves
Oil – 1 tsp
  1. Heat oil in a pan, add mustard seeds, cumin seeds. Once they crackle add hing.
  2. Now add the green chilies, ginger and curry leaves. Fry for 15 sec.
  3. Add onion and fry on high flame till translucent.
  4. Add turmeric powder, red chili powder, coriander powder. Fry for 15-20 sec. 
  5. If you wish to add the eggs, add them now and stir till they are semi cooked.
  6. Now add the tomatoes and fry for a min. Let it become soft and not too pulpy.
  7. Add roughly chopped bread pieces and give a quick stir for 1-2 min. 
  8. Add lime juice if required now. Switch off the heat. 
  9. Add lots of fresh cilantro. Serve.
* You can add boiled potatoes, carrot and peas too.
